The Summer Salad I Am Loving

In need of some dinner inspo? Look no further! This is my summertime favorite! Grilled shrimp over steamed asparagus and all the veggies your heart desires! 🥙

I start by sautéing the shrimp with coconut aminos, garlic, and mustard. I steam the asparagus with avocado oil and lemon. Chop up your favorite lettuce (mine is romaine, butter lettuce, and arugula) and add your asparagus, cooked shrimp, and top with fresh guacamole!⠀

Building the Perfect Summer Dinner

If you are already a client, you may now my little acronym that I encourage you all to incorporate at every meal. PFFC. Make sure you are incorporating FIBER, FAT, PROTEIN, and CARBS at every meal.

Try this simple, clean, and nourishing dinner for your next meal with your family!

FIBER: Start building a large salad as your base. My favorites are romaine, carrots, cucumbers, celery, and heirloom tomatoes.* 

PROTEIN: Shrimp can be BBQ'd or thrown in a cast-iron skillet. Season with mustard, lemon juice, cayenne, paprika, turmeric and black pepper.

CARBS: Thinly slice sweet potatoes and bake for 35-45 min at 400 degrees. If you like them extra crispy throw them on broil for the last few minutes.

FAT: Cooking with healthy fats such as avocado oil or olive oil are an amazing flavor addition and way to make sure you are getting your Omegas. My simple go-to salad dressing is 1 tbsp of mustard, 2 tbsp of lemon juice, 2 tbsp of water, and 1tbsp of olive oil 1 tbsp of maple syrup. It is enough to serve about five people.
